Microwave Personal Pizza ~ low-carb, keto, & THM-S ~ Our Cozy Den

Microwave Personal Pizza 🍕{low-carb, keto, THM-S}

Raise your hand if this ever happens to you: you make dinner for your kids– maybe that’s leftovers or sandwiches or frozen waffles because you just-can’t-even right now– and then you realize that you are starving and have nothing to eat for yourself. It can be exhausting to make a healthy dinner for yourself. It feels, well, selfish. Options like my cauliflower crust pizza are yummy, but they can also be time consuming. So I created this little recipe with some trial and error, and I’m super pleased with the result! Here are the reasons why I love it: 🌟 It’s super easy and fast– I Read More

Where Have You Been? {when life kicks you in the shins…}

A dear friend reached out to me last week and asked, “I haven’t seen you blogging lately. Is everything okay?” No, everything has not been okay. It’s hard to admit that, especially in such a public forum. But sometimes we go through seasons of life when we feel like we are drowning, barely keeping our heads above water. Life ebbs and flows. It’s a neverending timeline of people coming and going, children growing and changing, seasons of fulfillment and emptiness. It’s hard sometimes to reconcile the part of me who is so upbeat and happy with the part who feels so lonely and sad. I Read More

1 year post-diagnosis: PCOS update

Today marks a special anniversary for me. It is 1 year ago to the day that I was diagnosed with PCOS. That day was one of the hardest of my life. I remember bawling my eyes out on my husband’s lap at what a huge change it was going to be in my life. I felt completely overwhelmed and hopeless. A lot has changed (and some hasn’t!), so I wanted to check in and let you know how things are going! Timeline of the Year: December: Diagnosed ~ My doctor put me on a sugar free diet: no sugars, dairy, fruits, grains of any sort. It Read More

My Thoughts on Turning 31!

I don’t usually post on Sundays, but tomorrow is a very special day… It’s my 31st birthday! This year has been a rollercoaster ride, to say the least. It has been filled with so many blessings and joy, as well as many trials and tears. I wanted to take a moment to look back on what this year held for me, as well as what I hope to accomplish in the year(s) to come!   Biggest Moments of my 30th Year: Getting diagnosed with PCOS was huge. In many ways, I’m happy to finally have answers for the troubles that were plaguing me. But it’s Read More

Zucchini Lasagna {Grain-Free!}

One of the happy side effects of having PCOS is that it forces me to make healthier decisions — not only for myself, but for the whole family. This past year, I’ve been adapting many of my old favorite recipes to make it PCOS-friendly, which means no carbs, no grains, no sugar at all. Let me show you how I make lasagna now! INGREDIENTS: 1 pound of ground beef (or turkey) 24 ounces of spaghetti sauce 1-3 zucchinis, depending on size 8 oz. ricotta cheese 1 egg 1/2 cup parmesan cheese 1 1/2 cups shredded mozzarella cheese 1 tsp parsley 1/2 tsp each of salt Read More

Cauliflower Crust Pizza

I’ll admit, when I was diagnosed with PCOS, I cried a little. Okay, a lot. Not because I was devastated by my illness, but because I was grieving my old lifestyle — you know, the one where I ate whatever I wanted. Including my favorite food: pizza. I could literally eat pizza all day, every day, and not get tired of it. So I was ecstatic when my friend made me some cauliflower crust pizza! It was SO good! {Not as good as Papa John’s, but really good!} So today I’m here to share the recipe with you! Ingredients: For each pizza crust, you need the Read More

Pasta-Free Chicken Alfredo

This is a GREAT recipe for anyone who has to eat gluten-free, low-carb, or people who have PCOS like me! This specific recipe is for Chicken Alfredo, but you can read the directions for how to prepare the spaghetti squash and use that to replace any pasta in any recipe. Sometimes I use it for mac & cheese, spaghetti, chicken parmesan, and lots more. Ingredients: 1 spaghetti squash broccoli (optional) chicken, cooked alfredo sauce mozzarella cheese (I don’t have specific amounts listed, because the amount of broccoli, chicken, alfredo sauce, and cheese you use are up to you, based on your personal preference!) Instructions: This Read More

Zucchini “Pizza”

So I was making my husband a pizza sub for lunch today. It looked SO good. But alas, I cannot have subs, since I can no longer have bread. As I was opening the fridge, I spied a zucchini sitting in there, and I decided to experiment. First, I sliced the zucchini into 4 thin strips, and laid them on a cookie sheet. Then, I covered it with pepperoni and cheese. Finally, I baked it for about 20 minutes at 375 degrees. I ate it with a fork, and dipped bites into marinara sauce. It turned out delicious! It satisfied that pizza craving, but without Read More

Homemade Protein Bars & Bites

Since being diagnosed with PCOS a few months ago, I’ve been really stepping out of my comfort zone when it comes to new recipes and trying new things. Cutting all sugar and most carbs out of my diet was no easy task. One thing that I really needed was a grab-and-go snack, since most of my actual meals took a lot of prep time. Companies do sell bars that I could have, but they are crazy expensive, like $3 a bar… no thank you! The homemade granola bars that I usually made for the kids, though healthy, did have added sweeteners (honey) that I could Read More

My diagnosis: PCOS ~ What it is, how it’s treated, and my journey so far

Last week I finally got an answer that I had been seeking for years: I have PCOS. Let me backtrack a little and tell you how I got to that point. After I had Finn in 2012, I was eating healthy and exercising and I lost a lot of baby weight very fast. When he was about 9 months old, I was still eating well and exercising, but all of a sudden I gained 25 pounds in 5 weeks. I went to the doctor, insisting that something was wrong. He tested my thyroid, and said that I seemed to be healthy. He told me to diet Read More
