You know that freak-out moment you have when you realize you forgot to buy the ingredients to make dessert for your dinner guests? Or you’re going to someone else’s house and you want to take something but the fridge is empty? Or you want to take a treat to an ailing friend but you don’t have time for a trip to Walmart?
Cinnamon Roll Cake to the rescue!
I make this cake ALL the time. I love that it’s so versatile: it goes with nearly any kind of dinner, and it’s a huge hit with everyone who tries it!
- 3 cups flour
- 1/4 teaspoon salt
- 1 cup white sugar
- 4 teaspoons baking powder
- 1½ cups milk
- 2 eggs
- 2 teaspoons vanilla
- 1 stick of butter, melted
- 1 cup (2 sticks) of butter, softened
- 1 cup of brown sugar
- 2 tablespoons flour
- 1 tablespoon cinnamon
Choose ONE of the following:
- 3/4 cup of white frosting, melted
- 2 cups of powdered sugar + 5 tablespoons of milk
- or none (or make up your own!)
Mix together all of the cake ingredients except the butter. Then slowly stir in the melted butter until just barely mixed up.
Pour into a greased/sprayed 9×13 cake pan.
In another bowl, mix together the swirl ingredients.
Then drop it by spoonfuls all over the prepared cake:
Take a butter knife and go back and forth across the pan, both directions. It should look like this:
Bake at 350° for about 30 minutes.
While it’s still warm, add the topping of your choice! My kids like frosting best, I prefer the powdered sugar + milk glaze, and my husband likes it with no topping at all! I usually just go with whatever ingredients I have handy!
It tastes best hot, so I often pop it in the oven when we start dinner and it’s ready to go when we are done eating! It’s sticky and messy, so it’s not a pretty cake to serve, but it is delicious!!
