Have you ever heard the term “survival mode”? It’s a thing that happens to moms when life just gets overwhelming: moving, new baby, illness, or in my case: husband-out-of-town. Doing the parent thing by myself is no joke. {Mad props to you single parents out there!!} This past week I only got a measly 2 blog posts up before my brain imploded, and this week isn’t starting out so hot either. Anyways, let’s take a look at this week’s menu, though I reserve the right to pick up a Little Caesar’s $5 pizza if I start to lose my mind again…
As usual, a few notes before we get started:
- Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
- Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.
Sunday:
Lunch ~ Grandparents were watching the kids & took them out to lunch
Dinner ~ leftovers
Monday:
Lunch ~ black bean quesadillas with fruit
Dinner ~ lasagna with garlic bread and green beans
Tuesday:
Lunch ~ tomato soup with toast & yogurt
Dinner ~ tuna noodle casserole with peas (and I’m trying out something new: homemade egg noodles! If it turns out yummy I’ll share the recipe!)
Wednesday:
Lunch ~ sandwiches (peanut butter with jelly or honey or turkey and cheese) with fresh fruits and veggies
Dinner ~ leftovers
Thursday:
Lunch ~ black bean quesadillas with fruit
Dinner ~ crockpot chicken enchilada casserole
Friday:
Lunch ~ tomato soup with toast & yogurt
Dinner ~ tacos
Saturday:
Lunch ~ sandwiches (peanut butter with jelly or honey or turkey and cheese) with fresh fruits and veggies
Dinner ~ leftovers
What I spent this week:
Here is my receipt from Walmart this week.
What I got: 2 bags of tortilla chips, apples, sour cream, green chiles, tuna, raspberries, & bananas.
My husband did the shopping, so I was a bit worried he’d come home with the wrong things, but he was spot on! Nice job honey! 😉
Total spent: $12.81!
