Taco Casserole Recipe ~ from Our Cozy Den

This is a recipe that I made up one day because I was out of dinner ideas. I just started pulling things from the cabinet, and you know what? It worked. This isn’t usually the case with my concoctions — I’ve had many duds in my time. But this one has been loved by my family for years now, and I’m going to share the recipe with you!

I love this recipe because it is easy, delicious, and CHEAP! I can make a whole 13×9 pan, which feeds our family for two dinners, for under $4. Not bad, eh? That’s $2 a dinner, or less than 34¢ a serving!

  • 2/3 pounds of beef {see my post here about using less meat!}
  • taco seasoning
  • 1 lb pasta, any type you like {*you can also sub in brown rice as a healthier and even cheaper substitute if you like!}
  • shredded cheddar cheese
  • 1½ cups each corn, black beans, & diced tomatoes (or 1 can of each if you are using canned) For the tomatoes, you can get plain, or with green chiles, whichever you prefer.

In a small pot on the stove, cook the noodles. At the same time in a frying pan, fry up your ground beef. Drain both. When the beef is done, add the taco seasoning (1 packet of the packaged kind, or 2 Tbsp of the homemade kind).

While all that is cooking, drain the tomatoes, black beans, & corn and pour into a large mixing bowl.

Cover with cheese and broil in the oven, just long enough to melt the cheese, usually 4-5 minutes. Taco Casserole Recipe ~ from Our Cozy Den

SO easy, right? As long as I remember to thaw the meat, this meal can be prepped start to finish in 20 minutes!

This is a great meal to make ahead because it freezes well too! Sometimes I make a triple batch and throw a few in the freezer for nights when I’m lazy, running behind, or if I want to take a meal to a sick friend!
