This past weekend was amazing. I spent 3 days at an incredible women’s retreat, full of worship, prayer, relaxing, learning, fellowship, and friends. 🙌📖🙏 So I’m starting this week with a renewed sense of energy, ready to hit the ground running, and give every day my best me! 🏃💁🌅
Let’s take a look at this week’s menu!
As usual, a few notes before we get started:
- Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
- Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery from my garden), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.
Sunday:
Lunch ~ lunch at our favorite Mexican place — they have 99¢ kids meals on Sundays so our whole family can eat for under $20 {that’s cheaper than McDonald’s for 6 people}!
Dinner ~ leftovers
Monday:
Lunch ~ black bean quesadillas with fruit
Dinner ~ spaghetti (zucchini spaghetti for me, since I can’t have noodles)
Tuesday:
Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies
Dinner ~ leftovers
Wednesday:
Lunch ~ vegetable soup with crackers & cheese
Dinner ~ chicken and veggie stir-fry with rice
Thursday:
Lunch ~ black bean quesadillas with fruit
Dinner ~ breakfast for dinner: sausage gravy & biscuits, with scrambled eggs
Friday:
Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies
Dinner ~ 💕 Date Night! 💕 My friend and I trade off every month babysitting each other’s kids so we can have free dates! She’ll be feeding my kids, and Byron and I are using a gift card to have a quiet dinner alone!
Saturday:
Lunch ~ lunch at a friend’s house
Dinner ~ homemade pizza (cauliflower crust pizza for me) with salad
What I spent this week:
Here is my receipt from Walmart this week.
What I got: shredded mexican blend cheese, oatmeal, milk, tortilla chips, bread crumbs, zucchini, bananas, apples, hair gel, and oranges. I price-matched the oranges to the Aldi sale ad to save a little more.
Total spent: $30.90! This is a little higher than usual, but I’m not worried because it always averages out!
