Weekly Menu: February 14th – 20th {Menu Confessions}

Weekly Menus from Our Cozy Den ~ Feeding a family of 6 on under $250 a month!

Okay, I have a confession to make… the menus I post every week aren’t exactly what we’re eating. The truth is, I’m a busy mom. I run this blog, I homeschool 4 kids, and I have 2 freelance side gig jobs. So my weekly meal plans are just that: a plan. And sometimes (a lot of the times), things don’t go according to plan.

Case in point, last week I put on my menu that I was going to make pizza burgers on Tuesday and chicken enchilada casserole on Thursday. Well, Tuesday I realized that I forgot to buy tomato paste that I needed for the pizza burgers, so I improvised and made sloppy joes instead. And Thursday ended up being a crazy day. I don’t even remember what we ate- probably one of my go-to fallbacks like pancakes or omelettes. We didn’t eat the casserole until Sunday of this week. And then this week, I didn’t go to the store until Tuesday, so this post is late… sorry.

So, just in case you thought I had it all together {I don’t!}, here is some anecdotal proof that I don’t even follow my own plans!

 

Anyways, onto this week’s [intended] menu!

As usual, a few notes before we get started:

  • Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
  • Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery from my garden), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.

Sunday:

Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies

Dinner ~ crockpot chicken enchilada casserole

Monday:

Lunch ~ pantry cleanout (some of the kids chose easy mac packets that have been in there who-knows-how-long, one kid chose soup, they all had some applesauce to go with it)

Dinner ~ omelettes

Tuesday:

Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies

Dinner ~ leftovers

Wednesday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ spaghetti & meatballs with garlic bread and green beans {zucchini spaghetti for me}

Thursday:

Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies

Dinner ~ venison chili

Friday:

Lunch ~ vegetable soup with yogurt

Dinner ~ leftovers

Saturday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ homemade pizza {cauliflower pizza for me}

What I bought: bread, tortilla chips, shredded fiesta cheese, tortillas, diced tomatoes, and bananas (price-matched to the Aldi sale).

Free from WIC this week: 2 gallons of milk.

Total spent: $20.32!
