Weekly Menu: January 31st – February 6th

Weekly Menus from Our Cozy Den ~ Feeding a family of 6 on under $250 a month!

Last week was a crazy one. If you remember, I was supposed to cook a turkey on Wednesday but then I forgot to put it in the oven. Then I forgot on Thursday. Then I forgot on Friday. Finally I set an alarm on my phone and I cooked the turkey on Saturday. The turkey-noodle-casserole made from leftovers that I was supposed to make last Friday, I ended up making yesterday {Sunday} but then when I cooked it… I forgot the turkey!! I just made noodle & vegetable casserole. Oops!

Needless to say, I need a do-over. I still have a bunch of leftover turkey to use, and my brain is a bit fried right now.

 

Anyways, let’s see what we are eating this week!

As usual, a few notes before we get started:

  • Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
  • Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery from my garden), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.

Sunday:

Lunch ~ my dad took us out to lunch to celebrate Lia’s birthday

Dinner ~ turkey noodle casserole

Monday:

Lunch ~ vegetable soup with yogurt

Dinner ~ shredded turkey sandwiches on my homemade buns, with fruit on the side

Tuesday:

Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies

Dinner ~ leftovers

Wednesday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ Family Dinner Night at church

Thursday:

Lunch ~ sandwiches (peanut butter with jelly or honey) with fresh fruits and veggies

Dinner ~ crockpot chicken taco soup

Friday:

Lunch ~ vegetable soup with yogurt

Dinner ~ homemade pizza (cauliflower crust pizza for me)

Saturday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ leftovers

 

What I spent this week:

What I bought: corn tortillas, 1 gallon of milk, 1 bag of tortilla chips, apples, oranges, bananas, and a loaf of bread.

Total spent: $19.01!
