Weekly Menu: January 3rd-9th

Weekly Menus from Our Cozy Den ~ Feeding a family of 6 on under $250 a month!

It’s the first week of the New Year!! I have so many exciting things in store for this year — including my 2016 Challenge, a mission trip to Haiti, another big adventure like last year’s #GreatLakesAdventure, the slight possibility of a new job and/or move… lots of fun going on! This year we also started our new homeschool year, breaking open all the new curriculum — which is always lots of fun!

 

Let’s take a look at this week’s menu, shall we?

As usual, a few notes before we get started:

  • Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
  • I have written about my large once-a-month pantry shop. I try to plan most of my menu to use what we already have on hand in the pantry and freezer. Bulk buying = BIG savings!
  • Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery from my garden), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.

Sunday:

Lunch ~ vegetable soup with crackers and fruit

Dinner ~ leftovers

Monday:

Lunch ~ sandwiches (peanut butter with jelly or honey, or turkey and cheese) with fresh fruits and veggies

Dinner ~ baked chicken tacos

Tuesday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ leftovers

Wednesday:

Lunch ~ our first #FieldTripWednesday of the school year — I haven’t figured out where we’re going yet, so we’ll either stop somewhere or pack lunches.

Dinner ~ Family Dinner Night at church

Thursday:

Lunch ~ sandwiches (peanut butter with jelly or honey, or turkey and cheese) with fresh fruits and veggies

Dinner ~ sausage, potatoes, & corn, sauteéd in olive oil with italian seasoning with salad on the side

Friday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ carne asada

Saturday:

 

NO IDEA! My husband and I leave for Haiti on this day, so my sweet mother-in-law will be handling meals for this day and all of next week. I have frozen several casseroles and the pantry is stocked with lots of options, so she’ll have plenty to feed them.

Weekly Menus from Our Cozy Den ~ Feeding a family of SIX for less than $200/month! This is what I got: 2 gallons of milk, 2 bags of tortilla chips, 2 loaves of bread, a pack of taco shells, and a package of corn tortillas.

Free this week: my dad came over and surprised us with a HUGE cooler full of fresh produce! He brought 10+ packages of berries, 2 bags of oranges, a bag each of apples, pears, salad, tomatoes, carrots, and zucchini, and an onion. What a blessing!!

Total spent this week: $12.72!
