Weekly Menu: December 27th – January 2nd

Weekly Menus from Our Cozy Den ~ Feeding a family of 6 on under $250 a month!

 

The holiday is over, the decorations are put away, and now it is time for some DOWNTIME before we start our new school year next week!

One thing special about this week (and next week) is that I’m doubling some dinners. The reason for that is my husband and I are going on a mission trip to Haiti January 9-16th, and my amazing mother-in-law will be watching my kids at my house. I’m freezing some casseroles so she doesn’t have to worry about what to feed them!

Let’s take a look at what this week’s menu entails!

As usual, a few notes before we get started:

  • Breakfast is not included in the menu, because in our house it is fend-for-yourself. But it is included in my budget and shopping. We pretty much eat oatmeal & eggs every day, with the occasional variance.
  • I have written about my large once-a-month pantry shop. I try to plan most of my menu to use what we already have on hand in the pantry and freezer. Bulk buying = BIG savings!
  • Snacks are also not on the menu, but my kids do get a snack each afternoon around 4 pm. Their choices are veggies (usually carrots and celery from my garden), fruit (I always have on hand a selection of oranges, bananas, apples, pineapple, berries, etc.), hard-boiled eggs, cheddar cheese sticks, yogurt, and granola bars.

Sunday:

Lunch ~ sandwiches (peanut butter with jelly or honey, or turkey and cheese) with fresh fruits and veggies

Dinner ~ leftover crockpot ham casserole

Monday:

Lunch ~ vegetable soup with crackers and yogurt

Dinner ~ taco casserole (doubled)

Tuesday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ leftovers

Wednesday:

Lunch ~ sandwiches (peanut butter with jelly or honey, or turkey and cheese) with fresh fruits and veggies

Dinner ~ tator tot casserole (doubled)

Thursday:

Lunch ~ Going to a Noon Year’s Eve party!

Dinner ~ leftovers

Friday:

Lunch ~ vegetable soup with crackers and yogurt

Dinner ~ lasagna, garlic bread, & green beans (doubled)

Saturday:

Lunch ~ black bean quesadillas with fruit

Dinner ~ leftovers

 

What I spent this week:

Usually I shop at Walmart, but my mom convinced me to go to Meijer this week instead. I wasn’t too pleased with the prices (or the selection or the layout), so I probably won’t shop there much in the future — only if there is a sale I can’t pass up.

This is what I got: zucchini, milk, ricotta, mozzarella cheese, pasta sauce, diced tomatoes, lasagna noodles.

Free from WIC this week: 2 loaves of bread and some bananas.

Total spent this week: $19.29!
