This recipe has been a family secret for years — hopefully my mom isn’t TOO mad at me for sharing it with all of you!
It always gets raving reviews from my friends, and it’s so simple to make. My 7-year-old daughter made 3 loaves of it today for our Thanksgiving festivities tomorrow.
Here’s how to make it!
1. Mix dry ingredients.
In one bowl, mix together 1½ cups flour, ¼ tsp salt, 1 tsp baking powder, 1 tsp baking soda, 1 Tbsp cinnamon, and 2 Tbsp pumpkin pie spice. Stir well.
2. Mix wet ingredients.
In a mixing bowl, combine 1 cup pumpkin, 1 cup sugar, 3/4 cups oil, and 2 eggs. Mix well.
3. Mix them together.
Pour the dry ingredients into the wet, beat until well mixed. Pour the batter into a sprayed bread pan.
Bake at 350° for 1 hour. It’s done when a butter knife in the middle comes out clean. Cool on a cooling rack for 10 minutes in pan, then remove from pan and cool completely on rack.
