My husband will be the first to tell you I was awful at making brownies – from scratch, from a box, any way – until I found this recipe. Ever since, I’ve been making delicious, chewy fudgy brownies far too often. This recipe makes enough dry mix for about 7 batches (in an 8×8 pan, double it for a 9×13 pan).

The Mix

6 cups all-purpose flour

4 teaspoons baking powder

4 teaspoons salt

8 cups sugar

1- 8 oz. can unsweetened cocoa powder

In a large bowl, combine together flour, baking powder, and salt. Add sugar and cocoa.  Blend well. Store in an airtight labeled container.

The Brownies

2 eggs, beaten

1 teaspoon vanilla

1/4 cup oil or melted butter

2 cups Brownie Mix

1. Preheat oven to 350º.  Grease or spray an 8-inch square pan.

2. In a medium bowl, mix eggs, vanilla, oil/melted butter, and Brownie Mix.

3. Beat until smooth.  If desired, stir in nuts.

4. Pour into prepared pan.  Bake 30-35 minutes.
